Super Speedy Curried Chickpeas

I'm not sure this recipe even warrants a blog post - it seriously is THAT quick. This is perfect for lunch or speedy dinner. Flavoursome, packed with protein and cheap too!

Serves 2


Ingredients:

  • 1 tin cooked chickpeas, drained

  • 2 tbsp mayonnaise - vegan works well!

  • 1 tsp mild/medium curry powder - you're choice how spicy


Method:

  1. Mix the ingredients in a bowl.

  2. Serve with rice or another grain, roast veg, salad and chutney.
