So simple, but full of creamy, savoury and zingy flavour. Perfect with roast veg, falafel and flatbreads, or dolloped on pasta, salads and tagines.
Makes a small bowl (serves 4-6)
Juice of 2 lemons
3 tbsp tahini - high quality, runny, light in colour tahini works best.
Handful of fresh herbs - parsley, coriander, a sprig of mint. Use what you have!
Add all of the ingredients to a small blender. Wizz until smooth. You may need to add a little water to loosen, or more tahini to thicken. Be careful - just a little more tahini will thicken the sauce quickly.
Season to taste with salt and pepper.
