This is my new favourite lunch. Avocado pile up on toast! The tahini and dukkah are the best bits - they add depth, creaminess, crunch and spice. Heaven on a plate and takes just 5 minutes.
Serves 1
Ingredients:
1 piece good quality sourdough
1/2 avocado, peeled and sliced
Handful of baby plum or cherry tomatoes
1/4 tsp tamarind paste
1/2 tsp honey
Handful of rocket
1 spring onion, sliced
1 tbsp good quality authentic tahini
1 tsp dukkah
Method:
Quarter the tomatoes and mix in a bowl with the tamarind paste, honey and a drop of extra virgin olive oil.
Toast the toast, then top with the sliced avocado, rocket, the tomato mix and spring onion. Drizzle over the tahini and sprinkle the dukkah. Season with salt and pepper to taste.
