Makes 10
Ingredients;
60g cashews, plus a few extra for decorating
60g water
200g plain flour
25g vegetable oil
3g baking powder
40g maple syrup
Method;
1. In a bowl, soak the cashews in the water for at least 3 hours.
2. Preheat the oven to 180 degrees Celcius.
3. Rub the oil into the flour and baking powder, to achieve fine breadcrumbs.
4. Blend the cashews to very fine pieces - not quite smooth.
5. Add the cashews and remaining ingredients to the flour. Mix gently to bring the mix together, but do not overwork.
6. Gently use your hands to form balls of the mixture. Place the balls on a lined baking tray, and using the back of a floured spoon, press the balls down into flat rounds.
7. Decorate with cashew halves by pushing them into the dough.
8. Bake in the pre-heated oven for 18 minutes, until the biscuits begin to colour at the edges.
9. Cool completely on a wire rack.
