Makes around 20 small balls
250g sweet potato
1 red onion
2 cloves of garlic
2 tins of chickpeas
Small handful fresh coriander stems
1 tsp ground cumin
1 tsp ground coriander
2 tsp sweet smoked paprika
2 tsp self raising flour
Pre-heat the oven to 180 degrees Celcius.
Peel and cube the sweet potatoes and cook until soft, either by steaming or covered in the microwave.
Roughly chop the onion and garlic and add to a blender with the chickpeas (drained), potato and all of the other ingredients. Blend until smooth. Season well to taste with salt and pepper.
Using clean hands, shape the mixture into small balls and place on a lined baking tray. Cook in the oven for 30 minutes.
