Ingredients
2 spring onions
1 clove garlic
2 fresh mint leaves
Juice of 1/2 lemon
160g cooked broad beans
50g cooked broccoli (microwave for a few minutes works fine)
100g courgette
For the salsa;
1/2 red onion
150g fresh tomatoes
2 tbsp fresh chopped coriander
Juice of 1/2 lemon
1/2 tsp maple syrup
1/2 tsp tamarind paste (not essential)
To serve;
2 burger buns

Method
Preheat the oven to 200 degrees Celcius.
Add the onions, garlic, mint, lemon juice, broad beans and broccoli to a blender and blend until almost smooth.
Grate the courgette and squeeze out the water by wrapping it in a tea towel and squeezing the liquid through the cloth.
Mix the courgette into to bean mix, and season well with salt and pepper.
Shape the mix into patties, and place on a lined baking tray. Cook in the oven for 30 minutes.
For the salsa, finely chop the onion and tomatoes and mix with the other ingredients, seasoning with salt and pepper.
Serve in lightly toasted burger buns with salad.
