Stewed Apples with Maple and Cinnamon Toasted Oats

Serves 4


Ingredients

2 large Bramley apples

Juice of 1/2 Lemon

160g oats

2 tbsp maple syrup

1/4 tsp cinnamon


Method

1. Preheat the oven to 180 degrees.

2.Add to a baking tray with sides, the oats, maple syrup and cinnamon. Mix thoroughly, then bake in the oven for 15-20 minutes, until golden.

3. Peel and cut the apples into bite-size pieces.

4. Place the apples in a sauce pan, with the lemon juice and 2 tbsp water.

5. Allow to cook on a low heat with the lid on for 12-15 minutes, until the apples have cooked through. Vary the cooking time to how soft you like them.

6. Serve a spoon of the apples with the toasted oats on top.


Tip 1; The apple mix freezes really well - so make a big batch to save for later. The oats also store well in an airtight container, so you can make enough to last the week.

Tip 2; Try stewing other fruits such as rhubarb, plums or berries. The oats work great with these too.
