Breakfast, brunch or BBQ, these are a winner every time. So easy, satisfying and cheap, these are a perfect solution to feeding a crowd!
And made from store cupboard ingredients, these can be thoroughly enjoyed all year round!
Serves 4 as a main, 8 as a side
Ingredients;
1 red onion
2 cloves garlic
2 tins plum tomatoes
1 tbsp tomato puree
2 tbsp maple syrup
2 tsp smoked paprika
1 tsp ground coriander
1/2 tsp chipotle paste
2 tins white beans (cannellini, haricot, butter or white kidney work well)
250ml vegetable stock
Method;
Heat 1 tbsp of oil in a large sauce pan.
Finely dice the onion and add to the pan, cooking on a low heat until soft.
Finely chop the garlic and add to the pan for a few minutes.
Add the plum tomatoes, tomato puree, syrup, paprika, coriander and chipotle paste. Using a large spoon break down the tomatoes.
Drain and add the beans, along with the stock and cook on a low heat for at least 30 minutes. Add more stock if the sauce dries out too much.
Season well to taste with salt and pepper. Remember to taste first as stock is salty!
