The method for these is so simple, and are perfect to pack into a lunch box for a slow release energy boost, thanks to the low GI of oats. When choosing granola, look carefully at the ingredients, as lots of breakfast cereals now include lots of refined sugar. I like Lizzi's low sugar granola and Husk and Honey Granola - based at Spa Terminus in London.
Ingredients
100g nut butter (almond or cashew best, peanut will give a strong flavour so bear that in mind if chosen!)
50g sunflower oil
100g honey or maple syrup
100g oats
150g self raising flour
50g granola (I like good quality, nutty and low refined sugar)
50g sultanas (optional - if there is no fruit in the granola)
Method
Pre-heat the oven to 200 degrees Celcius. Line a large baking tray.
Add all of the ingredients into a bowl, and mix to completely combine.
Divide the mix into 8 and shape into small flat rounds. Bake in the oven for 13 minutes.
