Fresh Corn and Pepper Salsa

Serves 6


2 sweetcorn cobs

1 large handful of fresh tomatoes

1/red onion

1 sweet red pepper

1 large handful fresh coriander

Juice 1/2 lemon

1 tbsp olive oil


1. Boil the sweetcorn in the cob for 5 minutes. Transfer to a grill or hot frying pan, and cook until beginning to char.

2. Finely chop the tomatoes, red onion, pepper and coriander. Slice the sweetcorn off the cob, and mix it all together in a bowl with the lemon, oil and a good seasoning of salt and pepper.
