Soft and still a bit goey, these are delicious with a cup of tea for a well needed energy boost! I personally prefer chocolate with a lower % of cocoa solids, but choose anything that you like. You can also freeze these once baked to keep them fresh for longer - if they aren't eaten first!
Makes 10
Ingredients:
100g smooth almond butter
50g sunflower oil
100g dark brown sugar
1 tsp vanilla extract
4 tbsp plant based milk
200g oats
150g self raising flour
1/4 tsp salt
80g chopped vegan chocolate (I used Pico Fairtrade Organic Hazelnut Milk Chocolate, but dark chocolate could work too)
Method
Pre-heat the oven to 180 degrees Celcius. Line a large baking tray.
Add almond butter, oil, sugar, vanilla and milk into a bowl, and mix to completely combine.
Add in the oats, flour and salt, and mix until just combined.
Add in the chopped chocolate and mix again.
Divide the mix into 10 and shape into small flat rounds. Bake in the oven for 13 minutes.
