Beetroot slaw

This mayo free slaw is a great way to include lots of raw veg in your diet.

Serves 6


1/4 red cabbage

1/2 red onion

1 large carrot

150g raw beetroot

A handful parsley

Juice of 1/2 lemon

1 tsp apple cider vinegar

4 tbsp vegan mayonnaise

1 tsp olive oil

1/2 tsp dijon mustard

1 tsp maple syrup



1. Thinly slice the cabbage and red onion, and add to a large bowl.

2. Peel and grate both the carrot and beetroot. Do the beetroot last as it will stain your board/grater etc. Add both to the bowl.

3. Chop the parsley and add to the veg along with all of the other ingredients. Mix well, then season with salt and pepper.
